Vinification and MaturationThe grapes were harvested and vinified over four days in static red fermenters and pressed off before completing fermentation and malolactic fermentation in stainless steel. The Ruby Cabernet component remained as clarified red juice with minimal skin contact to soften tannin influence in the finished wine. This juice was held unfermented before blending with the other parcels of wine.
